Spanish Recipe Paella  

Think of Spain and the thoughts that come first are the cuisine, dance and bullfights. From the array of delicious dishes that Spain has to offer, the most popular has got to be paella. Many people think that it is a difficult dish to make. While the preparation takes time, it cooks very quickly and tastes very delicious.


The main ingredients are rice which should be short-grained, meat and saffron. The meat can be any one from pork, rabbit or chicken to shellfish or other varieties of fish.

 Let us discuss the recipe made using fish, squids, shrimp and mussels. Pour approximately three tablespoons of olive oil in to a skillet and heat it. Dice the fish and add it in. Continue to sauté the fish till the browning effect is visible on all sides and place it aside. Next, sauté the squids till all the pieces have browned well. Set this aside as well.

Prepare the oven by pre-heating it to 375 degree Fahrenheit. In the meanwhile, put the special paella pan on the stove. Pour around three tablespoons of olive oil and set the stove on medium flame. Now, add the onions in it and sauté them until they become translucent. Add garlic and sauté them till they start to give a popping sound. Then add in the tomatoes and cook till they get heated through. Reduce the flame to low and add in the rice. Stir it till all the grains get covered with the oil and all the ingredients.

Now, pour the prepared stock in to the pan. Cook this in high flame for approximately 5 minutes till it begins to boil. Thereafter, add in other ingredients like paprika, salt to taste, pepper, saffron and white wine and boil for about 5 minutes. Add this cooked stock to the rice and continue to cook it on medium flame till all the stock is absorbed by the rice. You should not stir the rice since it may turn sticky. Instead, the pan can be turned now and then for even cooking.

Keep the paella pan aside. Decorate the pan as required with the sautéed fish, squid, shrimp and mussel. Place the pan now in to the pre-heated oven and allow it to bake for approximately 10 minutes. The rice will absorb all the stock and turn brownish and slightly crispy along the edges.

Remove the pan from the oven and keep it aside. Check to see if all the mussels have opened and discard any if they have not. Let the dish stand for about ten minutes before you serve it to your family and friends.
