Scientifically known as Cynara cardunculus, artichoke plants are one of the largest herbs that originated from Ethiopia, and presently these are being cultivated in many other continents. Artichokes were brought to the U.S in the seventeenth century by the European discoverers.

Artichoke has found its importance in many American families ever since it has been brought here. Artichokes are rich in dietary fiber and can be very easily digested. Artichokes are an excellent nutrient for those who have type 2 diabetes.
