World Best Carrot Cake Recipe

There are many carrot cake recipes. Here is one that tastes great and is good for you as well. For this cake you need 1 medium orange, 140 g raisins, 125 ml rapeseed oil, 115 g plain wholemeal flour, 1 teaspoon baking powder, 1 teaspoon bicarbonate of soda, 1 heaped teaspoon of ground cinnamon, 140 g dark muscovado sugar, 280 g finely grated carrots, 2 eggs, 115 g self raising flour.

Grate the zest from the orange and squeeze 3 tablespoons of juice. Pour this juice over the raisins and leave them to soak. Oil and line the base of a deep square cake tin. Now, mix the flour with the baking powder, bicarbonate of soda, and cinnamon. Next, put the white of one egg in a small bowl and the yolk in a large one. Break the whole egg in with the yolk. Add the sugar. Whisk this mixture until it is thick and foamy. Slowly add the oil and keep on whisking. Add the flour and use a spatula to mix it in. Put in an extra pinch of baking powder with the egg white and whisk. Now add the carrots and raisins to the flour mixture. Add the whisked egg white to this and pour into the tin. Level the mixture and bake for an hour at 160 degree Celsius. The cake can now be cooled, cut, and served. Add icing if you want to.

With the wholemeal flour, carrots and raisins this is a healthy cake that tastes good as well.
