Vitamin C or ascorbic acid is critical for the development and growth of bone, skin, and connective tissue, tendons, ligaments, and blood vessels. Its role extends to repair when these are injured. Vitamin C helps maintain skin and hair, healthy teeth and gums.

Vitamin C acts as a catalyst in the absorption of iron, necessary for the production of red blood cells.

It also helps in the healing process of burns, wounds and broken bones. Like vitamin E, vitamin C is an antioxidant which protects healthy cells against damage by free radicals. It has a proven performance in preventing certain types of cancers more especially associated with the mouth, lungs and stomach. Vitamin C is an antihistamine which defends against many allergies, infectious and bacterial diseases.

Vitamin C is readily available in fresh fruits and vegetables in particular citrus fruits and green leafy vegetables. A normal diet with at least five servings of fruit and vegetables should suffice for the average requirement of an adult. However, in certain cases higher intakes may be desirable in which event dietary supplements may be taken.

Deficiency of vitamin C shows up initially as fatigue, weakness and irritability. It could later progress to dental, skin and hair issues and anemia. Depending on symptoms and severity, blood tests may be called for. Generally an increased intake of the proper foods corrects a deficient situation quite easily.

However, at times it may be necessary to test for the ascorbate level in the system. This is done by simple tests in the urine and serum or blood plasma. The unfortunate part is that the measurements relate to recent dietary intake rather than the quantum stored in the body. Storage levels are measured by more advanced tests like liquid chromatography which will measure the concentration of vitamin C stored in tissue and lymphocytes. Such tests are generally outside the purview of most hospital laboratory facilities.
